Tahu campur Lamongan




This is one of my favorite food from East Java (Lamongan), Indonesia.
In my neighborhood  every day, there is a strolling food vendors. Usually @ 9 pm, we still had supper! If you are have a healthy living style, it's crazy to think to have this big supper @ 9 pm but I did that when I was young.  I can't miss this food after long discussion w/my parents.


This is the recipe how to make 'Tahu campur Lamongan'  ( Mixed Tofu beef soup) according to my mom recipe.

You need:
  •  a tendon, beef bone and all the good meat to make the broth.
  •  deep fried tofu, bean sprout, noodle, cassava fritter (lentho) and shrimp paste (petis)
  •  shrimp crackers

The INGREDIENTS

Broth
  • Grounds: Red pepper, shallot, garlic, coriander, kencur, ginger, turmeric, cumin and salt.
  • Saute all the ingredients after you grounded very well like a paste.
  • Add green onion, lime leaf, lemon grass and galangal (laos).

Cassava fritters:
  • Grounds: shallot, garlic, red pepper, coriander, kencur, lime leaf, laos, terasi, bay leaf and salt.
  • Mixed the paste with ground cassava 
  • Deep fry it one spoon to make a fritter.

How to cook it
..
  • Cook the beef until well done. 
  •  Mixed all the ingredients that you already sauteed
  •  Let the broth cooked well done 

 How to serve it
  •  Put a little shrimp paste (as desire) and sambal if you like spicy.
  •  Cut the green lettuce into a bite size
  •  Top it with noodle, bean sprout, tofu, cassava and shrimp crackers
  •  Pour the broth over it.

Now .. ready to eat ..hot sweet spicy beef soup ..  Have fun to try it!

Note:
  • I did not use measurement for all the ingredients. It is all depend on how much broth you make it.
  • If you know how to cook, you will know how to measure this for sure.
